I cooked up a bunch of breakfast sausages by almost following this recipe. I bought a family pack of regular ground pork, almost 6 lbs, for $1.29/lb. I omitted the coconut oil since the pork gave plenty of fat and the fennel since I’m out (too bad – it’s one of my favourite flavours) and baked them in the oven since frying that many sausages would have taken forever. I’m so glad I bought a full-sized, rimmed baking sheet when I cook things like this. (It covers the entire rack in my oven.)

I froze the cooked patties, separated by parchment paper, so I can take them out one or two at a time and microwave them for breakfast.
