Based on this recipe. I used vegetable oil to avoid having olive oil congeal in the refrigerator. This made a great caesar salad (with bacon, of course) for lunch.

  • ½ cup vegetable oil
  • 1/4 cup mayonnaise
  • 1 tbsp dijon mustard
  • 1 garlic clove
  • ¼ cup fresh grated parmigiano reggiano (parmesean cheese)
  • 2 tbsp fresh lemon juice
  • 2 tsp Worcestershire sauce
  • freshly ground pepper to taste
  1. In a blender or in a container with a stick blender, combine all the ingredients. Taste the mixture and add more of whatever you think it needs. The garlic flavour will get stronger as you refrigerate the dressing, but you can of course add more garlic if you like.
  2. Store the Caesar salad dressing in the fridge for up to a week.
