Make these pancakes, omitting the sweetener and cinnamon. (You could add some fresh dill or parsley if you wanted.) Arrange thin slices of cream cheese, smoked salmon, and cucumber on a pancake and then roll it up. Eat.

(I also had one of the pancakes with an apple sauteed in lots of butter and a bit of erythritol-cinnamon mixture. I don’t eat apples often, but it was a nice treat.)
