I packed lunch today – chicken thigh meat, olives, romaine lettuce, and creamy greek salad dressing. Unfortunately I didn’t find it filling enough. Some scones and peanut butter were leftover from a breakfast meeting, so I had a small scone with a packet of peanut butter – not ideal. I came home and looked up scone recipes and somehow ended up making the butter cake instead. It will be a nice snack at work.

I also picked up some organic oranges and lemons to make candied peel with. (I’m going to have to modify a recipe to use xylitol, erythritol, or a mixture since I can’t find a reasonable one online.) I think that the butter cake would be awesome with some chopped homemade candied peel in it.
