This morning, I made cream cheese pancakes. I’m not sure if it was because I used extra-large eggs, but the batter was thin like crepe batter so I made 2 large crepes. They held together very nicely. I ate them with butter and some erythritol-cinnamon (2 parts erythritol to 1 part cinnamon) that I mixed up earlier in the week because I was craving cinnamon toast. Yum!
