Even though I greased it well and I haven’t had problems with waffles sticking in the past, when I tried to bake these low carb pumpkin waffles in my waffle iron they stuck so badly I didn’t manage to eat anything but crumbs. I did make very good pancakes with the remaining batter, so I’ll just consider it a pancake recipe in future. (We ate them with No Sugar Added Butter Pecan ice cream – wow!) I used caramel-flavoured stevia drops and heavy cream in the recipe.
