Taco salad

I made this for lunch when a vegetarian friend came over. The Tofurky chorizo has 6 net carbs for the entire package, so 3 net carbs for the half package I ate.

Salsa and sour cream has become a regular salad dressing for me.

1 pkg Tofurky chorizo style, warmed, or ground beef seasoned with chili powder

lettuce

diced tomato

diced avocado

grated monterey jack or cheddar cheese

salsa

sour cream

Combine roughly equal parts of sour cream and salsa to make a dressing. You could add some lime juice, oil, or another liquid if you find it too thick, but I think it was good as is. Toss the lettuce, avocado, cheese, tomato, and dressing. Divide the mixture between two plates. Top each with half a package of the chorizo or ground beef. Eat.
