I have a lunchtime meeting every Monday and until now I had been buying lunch on Mondays. (Most days I walk home and eat there.) This morning I took 10 minutes to combine a small avocado, 1/3 of an English cucumber, a medium tomato, a splash of lemon juice, and some cooked chicken thigh meat in a bowl with a lid. (I had intended to include lettuce but ran out of space.) I brought a jar of greek feta salad dressing with me and had quite a tasty lunch.
