I made a Crustless Ginger Cheesecake with Lime-Sour Cream Topping tonight. I used xylitol as the sweetener, 3 duck eggs instead of the eggs and egg yolks, 10 drops vanilla stevia instead of the vanilla extract and 10 drops lemon stevia instead of the lime zest. I also added 1tsp blackstrap molasses to the filling. Warm, it was pretty good. I expect it’ll be ever better after it chills.
