Last night, I made Paleo cornbread with cheddar and roasted jalapenos. I omitted the garlic powder and caraway seeds and stirred in some diced cheddar cheese and chopped roasted jalapenos. The flavour was great, but the bread has too soft a texture to support add-ins. (I couldn’t resist – I love jalapeno cornbread.) I’ll either make it as written next time (no jalapenos or cheddar) or add some xantham gum for a firmer structure. I had it toasted with butter for breakfast.
