I made this recipe except that I blended it instead of mashing the ingredients together. If you do this, I recommend making it in advance and giving the bubbles some time to subside. It didn’t turn out all that well – the crepes weren’t pliable at all and most of them broke while I was getting them out  of the pan. They tasted OK, though. I ate them with sugar-free maple-flavoured syrup and bacon. I’ll likely try some other recipes online, but I’m also tempted to just add some guar gum to this one to see if it improves the structure.
