Cheesecake

This is kind of silly, but I searched for a recipe that included creme fraiche because I have some I should use up, then didn’t make the part of the recipe that actually uses creme fraiche. This combination of sweeteners made for a fairly sweet cheesecake – 1/4 cup xylitol might be enough. The cheesecake is creamy and delicious anyway.

1 pound cream cheese, softened
1/3 cup xylitol

1/8 tsp. stevia
2 Tbsp. vanilla extract
2 eggs
1/4 cup heavy cream

Preheat the oven to  300 degrees F.

Cream the cream cheese. Mix in the remaining ingredients in order. Pour into a greased baking pan that fits in your toaster oven. Bake for 45 minutes or until set. Cool to room temperature, then cover and chill at least 4 hours or up to 2 days.
