Salt and Pepper Tofu

I felt like tofu so I picked up a package of deep-fried tofu (1 net carb per 3 oz). This was a pretty good application, although I’ll probably add some fried cashews next time for extra fat.

1 package (4 pieces) deep-fried tofu, diced in large pieces

vegetable oil oil

1 celery rib, thinly sliced
1 medium red bell pepper, diced
1 tablespoon finely minced garlic
1 tablespoon finely minced ginger
1 bunch green onions, thinly sliced
1 tablespoon light soy sauce

1/2 teaspoon or to taste freshly cracked black pepper

Sesame oil

Heat oil in a wok on medium-high heat. Add tofu, salt, and pepper and cook until the tofu is heated through. Add the celery and red bell pepper. Sauté on high heat for about 4 minutes. Add ginger and garlic. Cook another 2-3 minutes. Add soy sauce and green onions and cook 1-2 minutes.  Drizzle some sesame oil over each portion.
