Open-faced club sandwich

Today’s lunch felt like a treat since it’s been a while since I’ve had a sandwich.

a miracle flatbread

a couple leaves lettuce, rinsed


dijon mustard


veggie cold cuts, I used Tofurky deli slices

optional: sliced olives, hot peppers, sliced dill pickles, or any other low carb sandwich toppings that you like

Using the flatbread as a base, layer the ingredients on top. I used the romaine lettuce as the top layer because I thought it’d be pretty easy to hold. It was still pretty messy – maybe I’ll try the veggie cold cuts as the top layer next time. (They’re less slimy than meat ones.)
