MACARONI SALAD

For some reason I keep wanting the crappy macaroni salad I see at the grocery store. This satisfied my craving nicely. You could, of course, use a second package of shirataki noodles instead of the fake chicken, but I wanted to make this more of a meal.

INGREDIENTS

  • 1 pkg. macaroni-style shirataki tofu
  • vegetable oil
  • 2 fake chicken breasts
  • 1/2 cup low carb mayonnaise such as Hellman’s
  • 1 Tbsp. lemon juice
  • 1 tsp. Dijon Mustard
  • salt and ground black pepper
  • 2 stalks celery,  thinly sliced
  • 1 red bell pepper, diced
  • 2 green onions, finely sliced

DIRECTIONS

  1. Bring a pot of water to a boil.
  2. Meanwhile, fry the fake chicken breasts in oil until cooked through. Dice the chicken breasts and set aside.
  3. Meanwhile, drain and rinse the macaroni. Boil the macaroni for 3 minutes. Drain and rinse.
  4. Combine mayonnaise, vinegar, mustard, and salt and pepper to taste in large bowl. Stir in macaroni, fake chicken, celery, red pepper and onion. Serve chilled or at room temperature.
