Eggs and tomatoes

I haven’t made almond bread since I burned it in the bread machine, which has taken me out of my rut of toast and cheese for breakfast. This isn’t much of a recipe, but in the absence of toast I do like to include some vegetables in my breakfast and this was a good way to do it.

3 eggs


salt and pepper

1 tomato, sliced

2 cheese slices

Scramble the eggs in butter with salt and pepper. Meanwhile, arrange the tomatoes on a plate and arrange the cheese slices on top. Spoon the eggs over the cheese slices so that the cheese slices melt. Eat.
