Not surprisingly, my bread machine has been unused since I started eating low carb in April. Before deciding whether to give it away, I’m trying some different low carb bread recipes in it.

I tried baking Simple and fluffy gluten free low carb bread in my bread machine on the quick bread, light crust setting. Alas, it didn’t come out very fluffy and the crust is on the edge of burned. (I’m going to cut it up and use it as dog treats.) My machine is a Zojirushi so I thought I might be able to do something with the custom cycles, but apparently they’re for yeast bread only. Oh, well – making this bread in the toaster oven is pretty easy.
