Hot Meatless Chicken Salad

Loosely based on this recipe. This turned out really well, although the garlic was quite raw tasting so I might make it with roasted garlic next time. Something like roasted red peppers might also be good.

To reheat leftovers, I’ve been arranging almond bread on my toaster oven baking sheet, spooning the mixture on top, and then toasting until it’s bubbly. It reminds me vaguely of hot turkey sandwiches served like this.

12 oz meatless chicken strips
14 oz jar palm hearts, drained and chopped
1 tomato, diced
3/4 cup mayonnaise
1 clove garlic, minced
1/2 cup grated parmesan

Preheat the toaster oven to 400 degrees F.

Combine ingredients except cheese in a baking pan that fits in your toaster oven. Sprinkle with grated cheese.  Bake for 20 minutes.
