Avocado-cilantro salad

If I have tomato next time, I’ll add that. Obviously I’m a fan of cilantro.

1 large, ripe avocado, diced

large handful cilantro, chopped

~1/2 cup pickled jalapenos, chopped, or to taste (I find my homemade pickled jalapenos milder than canned ones so I can get away with using more. Maybe top up with some bell pepper if you don’t have enough)

2 green onions, chopped

juice of 1/2 lime

1/2 block halloumi, diced

salt and pepper

Either fry the halloumi, warm it in the microwave (as I did – I was short on time/patience), or use it cold. Combine all the ingredients and season to taste with salt and pepper.
