Scrambled eggs with spicy peppers and onions

My favourite dish at a local Chinese restaurant, homestyle tofu, is deep-fried tofu in an oily-spicy-garlicky sauce with onions, slightly spicy green pepper (not bell pepper), carrots, and garlic scapes. My favourite bits are the tofu, carrots and garlic scapes, so after I’d eaten my takeout I had onions and green peppers in delicious sauce. It turns out that I really like them in scrambled eggs.

Heat the oil in a pan. Scramble the eggs and add them. Add the green peppers and onions (that you’ve spooned out with our without sauce depending on how hot you want the dish). Cook until done. Season with salt. Eat.
