BLT salad

This was a really great lunch. If I’d had some, cilantro would have been a lovely addition. I made it with the tempeh and onion still warm, but it’d be good with them cold, too. I should add some pickled jalapenos next time.

juice of 1 lime

mayonnaise

4 slices tempeh bacon, fried in oil, cut into bite sized pieces

1 small onion, sliced, fried in oil

1 small ripe avocado, diced

handful cherry or grape tomatoes, cut in half or quarters

salt and pepper

Combine the lime juice with as much mayonnaise as you like to make a dressing. (Thicker, thinner, tangier – it’s up to you.)

Combine the remaining ingredients, pour on as much dressing as you’d like, and season with salt and pepper.

Serves 1.
