Kale frittata

When I don’t have a frittata in the fridge, I really miss it – it’s such a lovely, convenient meal since it heats up in the microwave in about a minute. 


1 bunch kale

6 large eggs

1/2 cup heavy cream

salt and pepper

1/2 cup grated cheddar

Boil or steam the kale until tender. Slice into thin ribbons.

Preheat the oven to 350.

Heat some butter in an oven-proof pan. (I prefer cast iron.) Add the kale and toss just until it’s nicely coated with the butter.

Meanwhile, whisk the eggs with the cream and some salt and pepper. Pour the eggs into the pan and stir them with the kale.

Sprinkle the cheese on top and bake for ~30 minutes or until cooked through.
