LCHF horchata

Normally horchata contains rice and sugar, but I was pretty sure I could make something similar  with almonds and stevia. You can strain it after you blend it for a smoother texture, but I’m finding it enjoyable as it is. It’ll separate if you refrigerate it – just stir it before pouring. Obviously, this doesn’t taste exactly like horchata, but it has a nice flavour.

110 g raw almonds

3 1/2 cups water

1 Tbsp. vanilla extract (mine is vodka + vanilla beans)

1/2 tsp. cinnamon

1/8 tsp. stevia

1/8 tsp. guar gum

Blend all ingredients for several minutes, until very smooth.
